Any Eid day in Pakistan feels incomplete without one of the most well-loved Eid dishes, Kaleji (Liver). However, not everyone possesses the skill to make it delicious, so here we have a no-hack, guaranteed-to-please, newbie-friendly recipe!
Often people complain that their liver has hardened, but today we will show you how to ensure it remains soft and contains no smell.
Ways to wash the liver to avoid unpleasant odor:
- Put 2 tablespoons of vinegar in a cup of water and soak the liver in it for 10 minutes. Wash it thoroughly, then strain it so that the remaining water is drained out.
- Another way is to apply 2 tablespoons of garlic paste on the liver and let it rest for 10 minutes. After that, wash it thoroughly with water.
Fried Liver
Method 1)
- Put a good amount of oil in a pan and fry the liver. When the liver turns red, remove from oil.
- Add finely chopped onions, tomatoes, green chilies, a spoonful of chat masala, and lemon juice to the fried liver and enjoy.
Method 2)
- Make a marinade with a cup of yogurt. Add half a teaspoon of red chili powder, a quarter teaspoon of chopped red chilies, a pinch of turmeric, a spoonful of coriander, and a spoonful of chopped cumin. Marinate the liver in the mixture for about 30 minutes.
- Add oil to the pan and add in a few peppercorns (sabat kali mirch), 2 pieces of cloves, and 2 large pieces of cardamom (to remove the odor). Finally, add a grated onion and lightly fry.
- When the onion is light brown, cut a tomato into the pan. As soon as the tomato is sufficiently cooked, add marinated liver in the pan and fry well. The liver will cook completely in the yogurt water.
- Eventually, the liver will release its oil. Add salt to it and cook for 2 to 3 minutes. Turn off the stove, and add chopped green coriander, green chilies, and ginger for garnishing. Serve hot.
Important: Always add salt to the liver after it is cooked. If you add it at the beginning, the liver will harden.
